Tomato Upma

Tomato Upma is a South Indian delight that fuses the warmth of semolina with the zesty notes of ripe tomatoes. Ingredients

2 tbsp oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp urad dal
1 tsp chana dal
2-3 dried red chillies
Few curry leaves
1 cup roasted upma rava
Salt to taste
1 tsp ginger garlic paste
1 tsp chilli powder
2 cups tomato puree
6 split cashews
1 cup water

Directions

Heat up the oil in a pan

Add mustard, cumin, urad dal, chana dal and stir

Add red chilies, diced onion, cashews, curry leaves and stir

Add ginger/garlic paste and stir

Add tomato puree and water

Simmer for a few minutes

Add upma rava and mix well

Cook on low flame with the lid on
